Vegan Swamp Cake

Last week, one of my housemates made this Valentines's Day cake.

Another one of my housemates has recently become a vegan, and while the frosting would be okay to eat, the cake itself contained egg. So, I decided bake one that she could eat, and use up the leftover frosting so someone wouldn't cover their face with it to make a frosting beard (like the last time.)

Here's what I came up with:

I used the technique of 'frosting intuitively'


Here's the recipe for Vegan Swamp Cake:
  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar, agave nectar, sweetener, etc.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 banana, mashed
  • 1/2 cup non-dairy milk
  • 1 tablespoon vanilla extract
  • 1 tablespoon vinegar
  • frosting/decorations

Heat the oven to 350°F. Grease a pan. Mix flour, baking soda, and salt together. Mash a banana (you can use a blender or food processor to make sure there are no lumps.) Add the banana, vegetable oil, non-dairy milk, sweetener and vanilla extract; mix until batter is smooth. Add vinegar, stir a few times, and quickly pour it into the pan. Bake for 30 to 45 minutes, whenever your toothpick comes out clean. Let it sit for 15 minutes after baking, pop it out of the pan, and let it cool. Then, decorate it in a way that will most creep out your housemates.

Back in SC

The show was great. It took 3 buses, a train, and a plane, but I'm back at school, and exhausted.
I will get pictures of the finished piece up tomorrow, as well as pics from the gallery events once they are up.

In the meantime, here is a new piece, possibly soon for sale.

I was at the gallery yesterday. All of the art looks amazing. If you can't come tonight, it is a two week residency with events spaced throughout. Lots of great bands playing, and film screenings.
